Applesauce which stands in for sugar and butter keeps your calorie count in check without sacrificing the flavour in these crowd-pleasing pancakes.
If you use whole-wheat flour instead of the all-purpose variety you can increase your B vitamins for the day.
Ingredients
SERVES 2
3/4 cup (90 gm) Whole Wheat Flour
2 tsp Baking Powder
1/4 tsp Sea Salt or Himalayan Pink Salt Coarse
1/2 cup (143 gm) 0% Fat Greek Yogurt Plain
1/2 cup (143gm) 100% Organic New England Apple Sauce Company Unsweetened Apple Sauce
1 egg
1 tsp pure vanilla extract
1 cup (149 gm) Frozen Strawberries

Instructions
In a large bowl, whisk together the flour, baking powder, and salt.
Make a well in the centre and whisk in the yogurt, apple sauce, egg, and vanilla until combined.
Spray a large non-stick frying pan (or griddle) with cooking spray and heat over medium heat.
In batches, ladle the batter onto the skillet, about 1/3 scant cup per pancake.
Cook until browned, about 2 to 2 1/2 minutes per side.
(Hint: When making pancakes in batches, you can keep the prepared pancakes warm in a 95°C oven until all pancakes are done.)
Serve warm topped with the strawberries and any residual juices.
Serving idea: Top with a dollop of Vanilla Greek Yogurt
