- 8 Muffin Liners
Ingredients
- 1 cup 250 gm 100% Organic New England Applesauce
- 3 tbsp oil OR 3 tbsp applesauce or mashed banana
- 2 tbsp milk of choice
- 2 tsp pure vanilla extract
- 2 tsp white or cider vinegar
- 1 cup 150 gm spelt, white, or oat flour
- 1/4 50 gm cup sugar or unrefined sugar (Try Maple Sugar)
- 1/2 tsp salt
- 1/2 tsp each: baking soda and baking powder
- 1/4 tsp cinnamon
Instructions
- Whisk all liquid ingredients together.
- Preheat oven to 350F, 170C or 160C Fan, and line a muffin tin.
- In a new bowl, stir remaining ingredients very well.
- Pour dry into wet, and stir until just evenly mixed.
- Fill each liner about 2/3 of the way, leaving a little room because they will rise.
- Bake on the centre rack, 20 minutes or until muffins have domed and a toothpick inserted into the centre of a muffin comes out mostly clean
- Let cool
- If you want to make mini muffins, bake only 10 minutes.
Notes
You can also add a handful of raisins, dried cranberries, crushed walnuts or shredded coconut to these apple sauce muffins!
If you can, leave them overnight in the fridge or on the counter. The liners will peel off easier and the texture and flavour is even better. - I know, hard to believe but true!
Store leftover muffins in an airtight covered container. For optimum freshness due to the perishable ingredients keep in the fridge.
They can even be frozen! As if they would last that long.
